Today I completed Day 3 of Insanity Max:30, Sweat Intervals! Boy was it a tough one but I am starting to feel stronger. I maxed out at 9:27, I just couldn't hang when we got to the alternating lunge squats, my quads were shaking and on fire. But oh does that burn feel good!
So along with working out we need to make sure to consume a healthy diet. For example, today I replaced my breakfast meal with the great Shakeology that beach body offers, they are so tasty! For lunch I enjoyed some salmon sushi and a crunch roll, and for dinner I cooked a wonderful Salmon dinner for my husband, here is the recipe if any of you would like to try it out.
Baked Salmon with Sautéed Spinach and Garlic
2 5-ounce Salmon pieces Olive Oil
2 Lemons Garlic Salt
Teriyaki Sauce 2 Garlic Cloves
2 Cups Spinach
Directions:
Heat oven to 350 degrees. Heat oil in saucepan, mince garlic and add to oil then add spinach and sauté. Set aside.
Slice lemons and lay out on foil. Lay individual Salmon pieces on top of lemons, pour a little bit of olive oil on top of salmon, sprinkle garlic salt on top. Flip over and repeat. On the top side pour a little bit of teriyaki sauce on top ( I usually make a little zig zag across ours). Top it off with the sautéed spinach and garlic then place in the over for approximately 20 minutes.
Enjoy your salmon over a small bed of rice and pair it with some grilled asparagus. A very enjoyable healthy dinner!
