The other day during nap time I knew I needed to clean up before Brooklynn woke up but I just didn't have it in me to do so, what did I do instead? Well I browsed Pinterest for some new recipes and work outs. After pinning a bunch of work outs I told myself I would do later but really knew I wouldn't I came across a Mini Chicken Pot Pie recipe. Now one of my families favorite recipes I make is my Chicken Pot Pie so I though Hey this looks easy and fun to do I'll try this.
I picked up all the ingredients to make these fast easy Mini Chicken Pot Pies but as I was sitting playing with Brooklynn I decided that the recipe I had been reading didn't sound like it would have enough flavor for my family. Instead I ended up making my own filling sauce which really only took about 15 minutes. Here is how I did it:

Instead I ended up making my own filling sauce which really only took about 15 minutes. Here is how I did it:
Ingredients:
1/4 cup butter 1/2 onion chopped
1/3 cup flour salt and pepper
1 3/4 cup chicken broth 2/3 cup milk
Grands Flaky biscuits 2 cups frozen veggies
shredded chicken from a left over rotisserie chicken
Directions:
On Med heat cook onions in butter until soft. Stir in flour until thick. Add in chicken broth, milk, salt, pepper, and celery seed to taste. Stir or whisk until thick.
Combine filling with shredded chicken and 2 cups of frozen veggies.
Take the Grands flaky biscuit dough, flatten and place each one in a cupcake tin. Scoop about 2 spoonfuls of mixture into each one and place in the oven at 375 for 20 mins.
I was VERY impressed with how this turned out. The whole time I was prepping this I was worried that they would burn in the cupcake tins or that they would be stuck in there. They popped right out and were super easy to serve. Now I ended up changing the original recipe but you can find the original recipe here. I haven't tried that recipe because I just felt that for my family it wouldn't have had enough flavor. The great thing about these is that I was able to package them up and send them with my husband for lunch all week!
