A Night In

Last night I decided to surprise my husband with an evening in!  He has been working so hard lately and I've been sick all week, so a nice quiet evening paired with a steak dinner sounded absolutely wonderful!  Brooklynn got to spend the night at Grammy and Grandpa's house which meant she got to enjoy an evening of being spoiled!




While Brooklynn was having her sleep over I decided to surprise me husband with an amazing Filet paired with asparagus and homemade loaded smashed potatoes!

Here is my recipe for our favorite meal!

Ingredients:
2 Filets                                    2 1/2 sticks of butter
salt                                          pepper
2 tablespoons olive oil  

1 bundle of asparagus         olive oil
garlic salt     

4-6 red potatoes
chives                                      sour cream
3 1/2 sticks of butter            salt/pepper
bacon  bits                             shredded cheese
whole milk

Directions:
Preheat oven to 400 degrees
Salt and Pepper the Filets generously.  In a iron skillet heat up 1 half stick of butter and 2 tablespoons of olive oil until it is scolding hot! Sear Filets on both sides, about 1 minute on each side.  After searing filets on both side cute the other half stick of butter in half and place each half on each filet, then transfer the iron skillet into the oven for about 8-10 minutes depending on how big your filets are. 
note: this will make your filets medium rare to rare

Asparagus break off ends, drizzle olive oil and sprinkle garlic salt over the top.  Grill on medium low heat for 8-10 mins, roll asparagus while you are grilling them to get an even grill on all sides.

Red Smashed potatoes, cut potatoes into quarters and boil them till they are soft. Drain water and smash the potatoes (use a hand mixer if you have one).  Add milk 1/4 cup of whole milk, 3 1/2 sticks of butter, 1/3 cup of sour cream, bacon bits to taste, 1/3 cup of shredded cheese, chives, and salt and pepper to taste.

Sadly enough the two of us were asleep by 9 P.M. and come 6:30 A.M. this morning we were both laying in bed to an eerie silence in our house. haha We both definitely needed the 9 1/2 hours of undisturbed sleep. :)
