Rain, Chili, and Christmas movies!


I have been waiting all week for it to be Friday!




My husband has been asking me to make my chili for quite some time now but I like to save the chili for super cold rainy days and today is the perfect day! In fact, I'm not even sure we had my chili last winter because it was so dry.  Anyway I know it is early but I've already got the chili made and in the crockpot to simmer away all day long! Here is my chili recipe, it is a bit different because my husband and I are not fans of beans, so I think that makes this a Texas type chili.

Recipe:

2 lbs ground beef                        1 onion
2 cans diced tomatoes                 1 can tomato paste
1 can corn (drained)                    3 tablespoons sugar
2 tablespoons dried oregano       2 tablespoons dried basil
4 cloves garlic finely chopped    garlic salt
chili powder                                pepper
red cayenne pepper

Directions:

Chop up onion and sauté it with the meat while you are browning it.  Drain meat and onions and dump into crock pot.  Add diced tomatoes, tomato paste, corn, sugar, garlic, and all the spices.  Your probably wondering how much of each spice I use and honestly I cannot tell you.  I do it to the taste of myself and my husband and through out the day I might add more spices here and there.  Set your crockpot on low for 8 hours and let the smell take over your house!

I will update this post later tonight and let you know how it turns out.  Like I said it has been over a year since I have cooked this so the recipe might need some tweaking.  Usually I like to add jalapeños as well but I want Brooklynn to be able to eat it so I left those out this time.

I will be serving our chili with my new obsession, beer bread!  It is the best thing ever. haha 



We will also be drinking some coronas and watching some Christmas specials with our baby girl.
